Any Home Bakers Here?

OK guys, I tried making the whey cheese several times this week. For some reason, every time, nothing is forming in the whey, even though I am following the instructions exactly.

I’m going to be emailing the cheese making website, they have a cheese troubleshooting guy who helped me last time with Swiss cheese not forming holes.

I’ll let you all know what he says.
 
I forgot to say something, and this is off topic, but important.

I need prayers my way. I am suffering from very bizarre sleep symptoms, even with a CPAP. The symptoms all point to narcolepsy. I am seeing a doctor about it soon, to see if I have narcolepsy.

Until I can get to the doctor, please send prayers my way.

I recently discovered the 'warm' feature on my new oven. It goes to too high if I leave it on because it's for rewarming leftovers, but if I turn it on for 2 or 3 minutes, then off, it's just right.

I'm thankful that with GF baking there is only one rise needed. Kiddo too because when things are rising he's banished from tromping through the kitchen. It does make for some tip toeing by me white the fluffy is on the stove waiting for the oven to heat for the baking.
I have a kitchenaid counter top convection oven that has keep warm and proofing settings. The temperature adjusts up to about 200 for keep warm. Proofing is 85F. I have used both and they work well!

I have both sleep apnea and narcolepsy.

With sleep apnea you stop breathing many times a night, wake up tired and with a lack of O2 headache. I had a CPAP, kept pulling off my face when I moved at night, I was knowingly awake a lot. Just as tired in the morning, without the headache. I have had an oral appliance that brings my lower jaw forward for about 25 years. Works for me but I know it doesn't for everyone.

Narcolepsy is a condition where your body isn't releasing (something) that tells your brain it is supposed to be awake. Symptoms are usually a distinct feeling that I want to go to sleep and have to fight it if I can't take a nap. It is usually manageable if I'm physically active.

I was on some drug for awhile which keeps you from falling asleep (which is good when you are driving and waiting at a red light). The "problem" with said drug is it did nothing to stop the feeling of NEEDING to go to sleep. I'm retired, don't have to go places daily and stopped taking it. I do spend many days in "fight off the need to sleep" or "brain fog" mode but that is no different than when I was on the drug.

It is VERY frustrating.

Here are my symptoms:

Frequent VERY vivid nightmares, waking up from them suddenly, sometimes punching, kicking, or growling immediately upon waking.

VERY vivid paralysis dreams or sleep paralysis while awake, unable to distinguish between the two, even after the event.

Waking up VERY tired, even with a cpap.

Waking up in physical pain, likely because I am pulling muscles in my sleep because of nightmares and paralysis.

Whenever I go back to sleep past a certain time, I have more of these symptoms than usual. I almost seem to go into dream sleep right away when this happens.

Concerning the nightmares, they are BAD. In the nightmares, I am being taunted, tormented, and sometimes worse by members of my family.

Keep in mind, what happens in the nightmares NEVER happened in real life, EVER.

I just can’t get a break from my problems, even in my sleep
