As far as using Jiffy, I suppose I have gotten lazy. Used to buy cornmeal and make cornbread in a cast iron skillet, the bottom crust was so crunchy and good.
Just got used to mix, pour and pop into the toaster oven![]()

I picked up some polenta ground corn meal from Whole Foods last year--It made great corn bread! It is a bit crunchy but had a nice corn flavor to it.

My Daughter that lives in Finland can't find regular corn meal either. She did find the polenta type and was very happy to make corn bread with it. She is pregnant and wheat was making her sick.Yes I have wondered if corneal has that same crunch. I think I would have liked it better without that but just can't seem to find regular cornmeal. DS ate 3/4 of the loaf![]()
