It is moist and sweet and the deep color just makes it look more tasty as well! They only problem I have with the recipe, It says it serves 9 :lau I think they meant Chickens certainly not 9 humans ;)

It looks like I need to make cornbread and post pictures of it cut into pieces. (like I need an excuse!)

You get what you normally get out of an 8 or 9 inch pan.
Ah c'mon, where's your adventure! You haven't met my husband. That pan would be like 2 servings.

As far as using Jiffy, I suppose I have gotten lazy. Used to buy cornmeal and make cornbread in a cast iron skillet, the bottom crust was so crunchy and good.
Just got used to mix, pour and pop into the toaster oven

The corn bread here is gone already!
Although I still have plenty of Chili left.

SIL and DD stopped by loved it.
No doubt its gone. With chili it goes fast.

I picked up some polenta ground corn meal from Whole Foods last year--It made great corn bread! It is a bit crunchy but had a nice corn flavor to it.


Yes I have wondered if corneal has that same crunch. I think I would have liked it better without that but just can't seem to find regular cornmeal. DS ate 3/4 of the loaf :-)

My Daughter that lives in Finland can't find regular corn meal either. She did find the polenta type and was very happy to make corn bread with it. She is pregnant and wheat was making her sick.

I wonder if you ran that other stuff through the blender or coffee grinder if it would take less time and still give you a less gritty product to bake with?
I don't have any or I would try it.

The middle one that she ended up with is about the same as my polenta. I can see from that your corn meal is much finer again.

I've got a pizza recipe where you are supposed to dust the pizza tray with corn meal first. I only used the polenta once. It was just too noticablely there when you ate it because of the crunch. Bit like eating sandwiches at the beach lol

Might try putting it in my magic bullet and giving another grind.
