Yes, what he said!!!! I did four “do-overs” before I finally stuck the landing! and I didn’t have nearly the sensitivity issues you and your family have. I was able to use good old rye and bread flours!

Day 2 for the re-start and it looks ok.

Thank you everyone for the ideas and troubleshooting with me! I've made a few environmental changes, and hopefully fixed some of the variables.

Did more research and found a variation that made sense to me, and doesn't have a lot of discards, so I'm trying again with just the brown rice flour. So now I have 2 being done two different ways.
