I love a frittata!I just took a frittata out of the oven. If you are wondering what to do with "all those eggs!" frittatas are the answer!
They are also good because:
--you can use up odd vegetable scraps
--it's gluten free
--it's paleo diet friendly (I think...?)
--it's easy to change it up, so it doesn't get boring
So glad I found out about these.
Here's my recipe, and it's just a general guideline. Make it yours.
Cast iron skillet (10-12")
400 degree oven
12 eggs, slightly beaten
1/3 cup milk
2-3 tablespoons sour cream
Italian seasoning
Salt
Pepper
Olive oil
Parmesan cheese
Vegetable possibilities:
Broccoli, cut into small florets
Carrots, cut into 1/8" slices
Onions, diced
Garlic, minced
Peppers, seeded and cut into small pieces
Greens of any kind
Cherry tomatoes, cut in half
Asparagus spears, cut into chunks
Sauté the veg in olive oil. You want them to be mostly cooked, and to lose their excess moisture. Add greens at the very end, so they wilt.
Mix the sour cream into the milk, and pour that into the eggs. Sprinkle any seasonings on, and stir together until just mixed.
When the veg are done sautéing, pour the egg mixture over and stir slightly in the pan so that the eggs and veg are combined. Sprinkle parmesan cheese over the top. Continue to cook on the stove on low until the eggs are set around the edges.
Bake at 400 for 10-12 minutes. Stick a knife in the center; it should come out clean. If not, bake 2-3 minutes longer.
Cool in pan. Store in the fridge.
Other things I haven't tried yet:
Grated cheese mixed in the eggs and veg instead of parmesan on top. Different seasonings. Other veg than what I've listed.
