Any Home Bakers Here?

I made a Lemon Poppy Seed Pound Cake for my meeting. I have to wait for the meeting before i can try it. 7PM tonight. :barnie

I just took a frittata out of the oven. If you are wondering what to do with "all those eggs!" frittatas are the answer!

They are also good because:
--you can use up odd vegetable scraps
--it's gluten free
--it's paleo diet friendly (I think...?)
--it's easy to change it up, so it doesn't get boring

So glad I found out about these.

Here's my recipe, and it's just a general guideline. Make it yours.

Cast iron skillet (10-12")
400 degree oven

12 eggs, slightly beaten
1/3 cup milk
2-3 tablespoons sour cream
Italian seasoning
Salt
Pepper
Olive oil
Parmesan cheese

Vegetable possibilities:

Broccoli, cut into small florets
Carrots, cut into 1/8" slices
Onions, diced
Garlic, minced
Peppers, seeded and cut into small pieces
Greens of any kind
Cherry tomatoes, cut in half
Asparagus spears, cut into chunks

Sauté the veg in olive oil. You want them to be mostly cooked, and to lose their excess moisture. Add greens at the very end, so they wilt.

Mix the sour cream into the milk, and pour that into the eggs. Sprinkle any seasonings on, and stir together until just mixed.

When the veg are done sautéing, pour the egg mixture over and stir slightly in the pan so that the eggs and veg are combined. Sprinkle parmesan cheese over the top. Continue to cook on the stove on low until the eggs are set around the edges.

Bake at 400 for 10-12 minutes. Stick a knife in the center; it should come out clean. If not, bake 2-3 minutes longer.

Cool in pan. Store in the fridge.

Other things I haven't tried yet:

Grated cheese mixed in the eggs and veg instead of parmesan on top. Different seasonings. Other veg than what I've listed.
 
Which is more like ham than bacon ;)
DD2 puts regular (pork belly) bacon on her pizza.
Ham, bacon....it's all good to me!
We don't indulge often so when we do it's extra yummy.

Is DD2 the one with the nightshade allergy? I was thinking the SD english muffin bread might be a good recipe to share except it calls specifically for potato starch, sorry.

I love a frittata!
So much so we got tired of them, but indeed one can put anything in a frittata. And yes, with grated cheese IN them is wonnerfull!! Even better is grated cheese in them AND parm. cheese on top. :D

I'm a bit more lazy though and often would just take a quart jar, crack 10 to 14 eggs into it, add some sort of liquid, dump in herbs and spices, then shake the jar until frothy.
Spray a casserole dish with oil, dump veggies of choice into casserole, pour egg mixture over, sprinkle with cheese and more herbs/seasonings, then bake.

Sometimes I might fry up garlic and veggies, other times I might dump in frozen veggies, and on occasion I'll use some sort of veggie leftovers. Pasta and cooked rice works too.
 
I was thinking potatoes would be good, but haven't tried them yet.
Been a while but I want to say I've done shredded taters in them. Zucchini too.
I usually keep baked taters in the fridge for an easy and quick meal of chunky cottage fries and fluffy scrambled eggs, but on occasion I get too many leftovers in the fridge and toss them all in a frittata. Fresh sauteed garlic scapes are also terrific in frittatas.
