I usually make five one-lb loaves at a time, and use about half a cup of honey for that size of a batch of bread. I'm still pre-diabetic, so I'm hoping that's not a significant amount of sweetener. I usually only eat one or two slices of this bread a day and I don't put anything sweet on it. I like it toasted (bc I keep it in the freezer) with a little butter and nutritional yeast flakes. Or sometimes I'll put peanut butter and half a sliced banana on it. I make the bread about 50/40/10 AP/WW/BF, with the BF being bread flour, and I add in a little wheat germ, flax seed and potato flakes as well.None DH is diabetic less is better here and yeast makes it's own sugar. Make sure your yeast if fresh.
