Any Home Bakers Here?

Hey yall...got a 25 lb. box of peaches to can and freeze...problem now is we have covid!
How long will they last before I have to do something with em?
I don't want em to go bad!
If they won't make it til weekend, then what is the least intensive method of preserving them til I can do the stuff I wanted with em like canning peach salsa and peach pie filling.

Covid is the worst. I had it at the end of 2020, and I wasn’t sure if I was going to make it or not. It’s a nasty virus. Get well soon.

On a sidenote, welcome to the baker’s thread! I’m not sure how to preserve peaches for that short of time, but I’m sure some other people here know how. I’m sure they’ll chime in soon.

I’m going to be making some more cheese soon. Not for the cheese itself this time. I need the whey. I want to try making Mysost, which is technically not a cheese according to the US FDA.

It’s made from the whey.

Maybe I’ll try making Monterey Jack cheese. I just need to save the whey.

I am sorry about the covid!

If you have enough energy, Pit them and freeze them in gallon sized bags. You can go back and make jam out of them later.

If you do not have the energy to pit them, wash them and put them whole in ziplock bags into the freezer.
