Any Home Bakers Here?

Fed my SDS, and she's a-bubblin' away on the counter. :thumbsup I'm going to make some GF machine bread tomorrow, and add half a cup of starter.

Right now I'm pan fry/baking potato chunks in the oven. Some olive oil, onion, garlic, salt, pepper, Cajun seasoning, and oregano.

These are great by themselves. I also love making a skillet meal out of them with eggs and any other veg I want to add.
 
Since temps cooled.. I will be doing baking more now.

Baked a Plum Cake. :) Well, I did add some alternate/additional fruits as well.

Here is the dough ingredients. In metrics. and US.
1,000 grams fine cake flour. "00" ,,,,, = 2.2 lbs.
600 grams plums. ,,,,,,,,, little over 1 pound.
150 grams sugar,,,,,,,,,, about 2/3 cup
1 TSP Vanilla
250 grams quirk, or farmers cheese. (crumbled finely) = Little over ½ pound
Eggs,,,,,,, 5 yolks plus 1 whole egg.
2 TBS active dry yeast,,,,,,, 2 envelopes is fine.
½ liter,,, milk,,,,,,,,,= (2 cups)
140 grams butter,,,,,,,,,,,, = 1 stick plus 2 TBS,
Pinch of salt.


Streusel;
I stick of butter
1 cup sugar.
1 cup flour.


Note on my rise method. (slightly simplified and shortened)
I set dough for first rise, It was fast,, and doubled in about 40 minutes. At that time, instead of deflating, and folding dough on a breadboard, I spooned the dough into the pans, and spread level with spoon. Then placed fruit, and streusel topping. The dough was getting a second rise as I was doing this. Preheated oven at that time, and in 10 minutes time, was baking.

I used 4 pans.

Into oven. 350°F 40 minutes.

NOTES:
This is first time for this particular dough recipe. I did not change any amounts. With exception of the additional fruits besides plums.
This can be made with any other fresh fruits as well. Can also skip fruits, and make a nice coffee cake with streusel topping.

First time using a Cake flour "00". instead of All-purpose. Not sure if that was a factor for Super Soft texture of cake in the middle.:idunno

First time adding Farmers Cheese to dough. (the cheese is my own production) If Farmers Cheese is not readily available, I think equal quantity of Cottage Cheese pureed would work also. According to the recipe, the additional benefit of the cheese,,, keeps cake fresh and moist extended period of time.
