Any Home Bakers Here?

Has anyone here made a gluten free pie crust? I have a couple of recipes I found online. DH (who is not GF) is doubtful of the quality.

The recipe I'm thinking I'll try uses Cup4Cup GF flour. I know it can make a huge difference which flour you use; this recipe says that Bob's Red Mill GF will make a crumbly crust. The brand I usually use is Namaste (cheap at Costco), but I'll buy a bag of Cup4Cup for this.

yesterday. DID MORE THAN I should. Changed bandange...FINGER was bleeding a little...after 5 day I thought
it was OK. Was the day before...but using too much ...was not wise.

Sally PB...the no crust PUMPKIN Custard is fine tasting. You should try it. We also make our Quiche with no crust. NO Problem. Works GREAT. and is Healthier.
 
For myself, I'd do a no crust pie. DH insists that the crust is an integral part of the enjoyment of lemon meringue pie. I make one or two of those a year for him, as it's his favorite.

Pie crust, to me, has nothing to recommend itself! No real flavor, a pain to make, and definitely not a healthy thing to eat. What's the point?
 
1 cup evaporated skim milk
2 cups pumpkin puree. 2 Tablespoons brown sugar
2 eggs. 2 tablespoons water
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
Sray pie plate with Pam
Mix all ingredients well
Pour into pie plate
Bake 350 degree oven
45 minutes or until set
It's a pie with no crust

Without the crust, I would add a crumble topping and call it a pumpkin crumble.
