There were a lot of extra carrots at home,,, so decided it was time for carrot cake. It has been a long time since I made carrot cake,, and that last time,,, it was a failure.I researched the recipes,
and seen where I went wrong last time. Grabbed this recipe, and followed it to a T. (maiden voyage of recipe) I made my carrot cake, not the usual style,, with fancy frosting.. Just basic with streusel topping.

These directions are from the recipe.. I did not follow them exactly. But following them will get same results. I used my Kitchen Aid machine to do the hard work.

Hand shredded the 300 grams of carrots. This amount is quite important for the other quantities of ingredients. (as in recipe)
My failed previous carrot cake,, I overdid this amount by much. (among other mistakes)

Here is where I did things my way,, instead of the recipe procedure.
Dropped the eggs into mixer
Added the oil
Added the sugar
Added the Vanilla
Started mixing,,,,,,,,
Added the cinnamon, and salt, and Baking Soda ,, continued mixing.
Added the nuts and the carrots and raisins,,,,,,, continued mixing
When all was mixed well, I proceeded to add my flour last.
I did add a couple spoons of extra flour.(over the recipe amount) Possibly because my eggs were quite largePrior to that the dough looked too soupy. Achieved the consistency I wanted with the extra flour.

Notes;
Made this coffee cake style. Tasted fantastic.In the future I may make same,, but frost it as well. I do have recipes for the cream cheese, and butter, and powdered sugar style frosting. It just wasn't in todays plans.
