Any Home Bakers Here?

There were a lot of extra carrots at home,,, so decided it was time for carrot cake. It has been a long time since I made carrot cake,, and that last time,,, it was a failure.:( I researched the recipes, :caf and seen where I went wrong last time. Grabbed this recipe, and followed it to a T. (maiden voyage of recipe) I made my carrot cake, not the usual style,, with fancy frosting.. Just basic with streusel topping.

These directions are from the recipe.. I did not follow them exactly. But following them will get same results. I used my Kitchen Aid machine to do the hard work. :thumbsup

Hand shredded the 300 grams of carrots. This amount is quite important for the other quantities of ingredients. (as in recipe)
My failed previous carrot cake,, I overdid this amount by much. (among other mistakes)

Chopped the pecan nuts.

Here is where I did things my way,, instead of the recipe procedure.
Dropped the eggs into mixer
Added the oil
Added the sugar
Added the Vanilla
Started mixing,,,,,,,,
Added the cinnamon, and salt, and Baking Soda ,, continued mixing.
Added the nuts and the carrots and raisins,,,,,,, continued mixing
When all was mixed well, I proceeded to add my flour last.
I did add a couple spoons of extra flour.(over the recipe amount) Possibly because my eggs were quite large:idunno Prior to that the dough looked too soupy. Achieved the consistency I wanted with the extra flour. :frow

Ready for oven. I baked a total of 45 minutes, @ 350°F

Notes;
Made this coffee cake style. Tasted fantastic. :drool:drool:drool In the future I may make same,, but frost it as well. I do have recipes for the cream cheese, and butter, and powdered sugar style frosting. It just wasn't in todays plans. :idunno

You could write a cook book.
 
Rain here off and on for a few days now. Yesterday I baked my usual, monthly, 3 loaves of white bread. I tried something new because the weather was a little unfavorable for me. So, I took out a heating pad, set it on low and placed my rising dough on it. An hour later and that dough was risen right to the top! Perfect little trick. I love becoming confident at something, and then, modding the recipe or steps and finding it works!
What a great idea! Gonna try this. What setting?

Two things. First off, I’m having a lot of problems tracking down watermelon flavored gelatin. I need it for a recipe I’m trying to make. Any idea where I can get some? Do I have to order it?

Second, don’t you just hate this type of plant? I stepped on it earlier barefoot, and it hurt.

This is a seed of Tribulus terrestris. The name is fitting, I have to say.

This is a seed of Tribulus terrestris. The name is fitting, I have to say.
It looks a lot like a puncture vine!
 
Low setting. Also, i place the dough in a big, warm, stainless bowl that i rinsed and dried using warm water. The stainless retains heat better. Actually, I dont think i would ever use anything but stainless for breadmaking. 🥔

That's what I use too. Have a couple of big stainless basins. Just the thing!
