I need some help from cast iron aficionados...

Yesterday, I cooked a sourdough pancake in my cast iron skillet, using coconut oil. Nothing stuck. YAY!

Today, I used coconut oil to make fried rice. The pan is a mess. I can NOT cook fried rice in that pan! Here's what I do. Tell me what I'm doing wrong, please. This also happens if I use olive oil to make fried rice.

Heat oil to shimmer. Reduce heat to Medium. Add rice. Stir it around a bit (already sticking! grrr!) Add in 3 slightly beaten eggs. Reduce heat to low. When eggs are partially set, add spinach. Cover. When spinach is mostly wilted, scrape everything out of pan. Cuss.

Maybe you should cuss one more time, maybe that will help.

When do you add water and cover?
 
I don't add any water. I cover it after I add the spinach. The spinach does steam, so that adds water. It condenses on the lid and runs down. Is that my problem?!? (Hoping it's that easy!)

I think I know what your problem is. One quick question, what heat setting are you using? According to the Internet, if you use too high of a heat setting, it can cause foods to stick.

This is because cast-iron retains heat much more than other types of cookware. If you’re using too high of a heat setting, you should lower the heat.

This is according to the Internet, of course.
 
I need prayers for my older brother. He got admitted to the hospital yesterday. Kidney problem.

I’m actually a little panicked right now, I’m just concerned for him. It’s not life-threatening, but I still can’t help but worry for him.

All I know is that he has a 2mm kidney stone, and there is something in his system that is too high, indicating the kidneys are not functioning properly.

You and your brother have my prayers, Jared. Is he in the same city or area as you so you can visit him? Is he older or younger than you? Kidney stones can be painful. Glad he is in hospital and getting care. :hugs

He and I actually live under the same roof, with my family. We both share the same mental illness. He’s older than me. I can definitely visit him, the hospital is only 40 minutes away.

It’s not just kidney stone, something else is way too high in his system, indicating that the kidneys are not functioning properly. I don’t remember what it’s called.
