I have not came across bread pans with such depth as the ones you are using. Not saying that there are none,,,, but probably available from specialty baking supply stores.,Antique Large Tins
Consider trying bread pans.. Also consider not changing that hydration amount. Higher hydration usually results in softer texture of bread.My last couple of SD loaves have come out soft and sticky. Probably due to high ambient humidity, thinking I need to decrease the water or increase the flour in my dough. Since I'm not baking in a closed vessel like a Dutch oven or loaf pan, it sprawls out and flattens out more than I would like but it is still delicious. Having fun learning & experimenting anyway!
