Any Home Bakers Here?

My last couple of SD loaves have come out soft and sticky. Probably due to high ambient humidity, thinking I need to decrease the water or increase the flour in my dough. Since I'm not baking in a closed vessel like a Dutch oven or loaf pan, it sprawls out and flattens out more than I would like but it is still delicious. Having fun learning & experimenting anyway!

I have not came across bread pans with such depth as the ones you are using. Not saying that there are none,,,, but probably available from specialty baking supply stores.,

Consider trying bread pans.. Also consider not changing that hydration amount. Higher hydration usually results in softer texture of bread.
If you like the flavor.... :drool:drool:drool,, stay with that recipe,,, and just consider bread pans as experiment.
 
What I've learned with baking is to change ONE thing when I'm trying to dial in a recipe. (Unless I know for sure what's wrong.)

When I first started making Betsy bread in my bread machine, the loaf was too tall. Ok, scale back the flour and water a little bit. (Well, that was two things, but those move in tandem.) Still tall, but texture was good. Use 1/4 teaspoon less yeast. Good! Loaf fits the pan just right.

Nice to have them visit. They love my Sourdough Multigrain and I enjoy
making it for them. They leave a few slices for me. ha hA
