Yes! I think I am in that boat. My starter is just 2 weeks old. I do see bubbles but haven't seen any "doubling" in size. Made pancakes this morning since the jar was full. Kept 1/4 cup aside to continue growing.

You can give bread without adding yeast a try to see how it goes.

It might take a bit longer for each rise though.

it was 60 this morning, I was in a Hoodie. my husband rolled his eyes. To be fair I'm anemic and always cold

Yes! Low thyroid here! I use my electric blanket year round. My DH has the AC on so low I'd freeze otherwise. I always wear a sweater to town, even on the hottest days, everyone seems to think if it's 90 outside it should be 60 indoors. Brrr!

My italian sourdough sometimes bubbles so madly I fear it is trying to take over the world, especially when it lifts its lid

Omg yes! Hubby has the air on in nothing but shorts and the rest of the house in in hoodies under blankets to be fair his body temp runs about 15 degrees warmer then the normal person so in the winter it's win win for me. Not so much come summer time for him lol
