Not 3 year old approved (really she is eating more variety then mine, I just give her a daily vitamin and let it go) But roasts are easy, great reheated, and fit your husbands meat and potato preference. Just throw that thing in the crackpot and enjoy yummy roast, roast beef sandwiches, etc.
Or get a brisket, crock pots it until it falls apart and add bbq sause, makes sandwiches for days.
Your daughter might eat tater tot casserole, and it is easy and reheats.

Lol I do not know how crackpot came out of my spell check :lau

porcupines are just meatballs with rice in them, simmered in tomato sauce. the rice pokes out so they look like porcupines. Kids tend to like them because they are "fun"

How about mexican food? You could make the bean or meat fillings (mild) to reheat, make a burrito or tostada. Bangers and Mash? You can cook up a batch of sausages in gravy, they can be reheated.

Or that great staple..... vegemite sandwiches LOL

For bread to rise, it needs yeast, sugar and contrary to what you read, salt. Salt is necessary and will regulate the yeast but not kill it.

So, make sure the yeast is good. Get 1\2 cup of 105F water, sprinkle the yeast over the top and let it moisten for 5 min. Stir that into the liquid ingredients with the sugar, salt and oil that is at least luke warm--85 to 90 degrees. It should bubble in about 15 minutes.

After that, add flour and begin kneading the bread. Once the bread is not sticky, kneed for about 7 minutes. The kneeding develops gluten that is the last thing needed for the bread to rise. Bread flour has more gluten so it will help the bread to rise. Bleach cake flour has the least gluten so it makes very flat bread. I use Organic un bleached All Purpose flour.

You do not need much sugar. I use about 1\3 of a cup for three loaves.

You do not need to punch down dough. The purpose is to move the yeast around in the dough--I do this when I shape the loaves.

I am making bread today--half of the flour is from spelt that I ground this morning. I used raw sugar for the sweetener.

My bread recipe is in the index. It has instructions for scaling it down to 1 or 2 loaves too.

you have explained everything very well. whenever i read recipes on the internet they could be sort of confusing. you have cleared up many of my questions. thanks!

Cook for yourself and hubby, make her try it, then let her eat cheese and her vegetables. When she gets older you can start making her eat what you eat, but she still has some baby in her, I wouldn't fight it too hard. Tater tot casserole is super easy, and while mine won't touch it, most kids love it.

How about a baby "antipasto" plate? Get her a segmented plate and put some carrots on one bit, and some cheese in another bit, and some capsicum (or whatever veges she likes). Some hummous if she'll eat it to dip her bits of stuff in. You could give her all her dinners in a segmented plate if that would get her over the "it's touching" thing.
Quote: Most people wouldn't really notice the rice, because it's in the meatballs. It's not like it's sitting there looking like rice.
