I really like the three egg cake I make. It is not super white but is very tasty.

Three Egg Cake

½ C Butter
1 ¾ cups sugar
2 teaspoons vanilla extrac
3 eggs
2 ¼ cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 cup milk
Set rack at the middle level in the oven and preheat to 350 degrees.

Butter the bottom of two 9-inch round or one 13 by 9 by 2-inch pan. Line bottom with parchment or waxed paper.

In a large bowl, beat butter and sugar until light and fluffy. Stir together flour, baking powder and salt. Set aside. Combine eggs milk and vanilla extract. Add 1/3 of the flour mixture to the butter mixture then add half the milk mixture. Continue to alternate beginning and ending with flour mixture. Scrape the bowl and beater often.

Pour the batter into prepared pan(s) and smooth top with metal spatula. Bake cake(s) about 25 to 30 minutes, or until a toothpick inserted in the center emerges clean.

Cool in pan on rack for 5 minutes, then turn out onto a rack, remove paper and let cool completely.

Here's a cooking question. Is there a trick to peeling the inside, thin, papery skin off a garlic clove?
Smack the clove hard with the flat side of a wide knife blade.

If you are using the cloves whole, I squeeze them good with my hand and it usually loosens it enough to peel off whole.
 
Unless the clove is going into the blender with other ingredients to make spaghetti sauce, I usually mince it. If you smash it, can you still slice/mince?

This is one I hit with the shovel when I was digging them up. That's one of the larger ones, but the ones I've been using recently aren't much smaller.
If you use the squash it with the knife blade by holding onto the knife with one hand on each side of the clove, it doesn't take a whole lot of pressure to loosen the skin. Yes you can still slice and mince it.
