Question on the waffels. I looked at the recipe and plan to make them tomorrow or Sunday breakfast. Do you use buttermilk (like it calls for) or can I just use milk? I'll have to run to the store either way. We made whole wheat bread with the daycare and used the last of the milk. Just checking. I can get milk and buttermilk if needed.

Add a table spoon of white vinegar to a cup of milk and stir. Let it sit for a couple of minutes and you have a buttermilk substitute.

I have only made it with buttermilk.

Funny that you ask…I wanted to make them for yesterday, but didn't have any buttermilk…so didn't make them..

Never tried the vinegar + milk sub.
 
One more question for you sourdough people. After a week of the start being out, should I start to refrigerat it, or give it two weeks before I start to refrigerat? It definitely smells sour! Lol.

If it was purchased and started, then you can put it into the fridge. Use it at least weekly and follow the instructions for replenishing it. It should be fully activated now.

Ok. It was purchased. It was dry and I fallowed the directions adding water and flour and feeding and stirring daily. Monday will be seven days, so I'll put it in the fridge monday. Thank you.

I keep mine in the fridge, once every 1-2 weeks take it out, stir it up, discard, feed and place it right back in fridge and it still lives at over a year - I think easier than other methods of maintenance. But I don't use mine often, folks who use theirs regularly do leave them out all the time.
 
For Christmas I got a Kitchen Aid stand mixer 610. I was finally able to play with my new toy last week. From the instruction/recipe booklet I made Oatmeal Chocolate chip cookies - delicious!!! Then I made the Honey Oatmeal bread using the dough hook. Wow, it was an amazingly fast kneading time. Plus the bread came out DELICOUS!!!!! I am having so much fun with my new toy and look forward to making my next yummy treat. Any ideas/recent tries on bread recipes out there?
