I am baking peanut butter cookies using peanut powder instead of butter. The batter was good.

Always glad to have another baker in the group! Feel free to share recipes or tell us how you liked one of the ones already posted.

I used to use the old Betty Crocker cookie recipe, but this is how I make peanut butter cookies now...fast, easy, always have the ingredients on hand (and they're gluten free).

4-Ingredient Peanut Butter Cookies
(Makes about 2 dozen)

1 Cup peanut butter (I like using chunky p.b)
1 Cup granulated sugar
1 egg
1 tsp. vanilla extract

Mix everything together in a bowl.
Shape into 1" balls (I use a cookie scoop).
Place 1" apart on a parchment lined baking sheet.
Flatten with a fork, making the criss-cross pattern.
Bake in a pre-heated 325* oven 14-15 minutes.
Cool on a rack.

Note: This makes smallish bite size cookies. Sometimes I like to press a few chocolate chips into the formed cookies before putting them into the oven.
