you guys are killing me. Once winter sets in here and I light the wood stove, I'll build a starter. 80+ days are pretty much gone now. I need to start baking bread again. If anyone has a recipe for a whole wheat or spelt that doesn't use bread or all purpose flour I'd love to see it. I grind my wheat and spelt as I use it. I do the same for corn meal.

I think @ronott1 has what you're looking for! He grinds grains too (and bakes about everything under the sun, lol).
 
Ron, what did you think about the cookie recipe (Walnut Breakfast cookies)? Hope you liked it!
They are a hit here!

I did not find a 14oz can of crushed pineapple. They were 8 or 20oz cans. I bought a 20oz can but bought the chunks by mistake. I Drained them by pressing on them and then measured out a cup and a third into a blender. I pulsed them until they were crushed and the drained them again. That got the liquid out and the cookie dough was the correct constancy.

My DD uses My Fitness pal to get nutrition information for the cookies:

I posted a link to this one earlier today. I will post it again in it's entirety.

When I made it, I used milk and not almond milk. The Spelt bread I baked today is mostly spelt flour from flour I milled last night.

SPELT BREAD


Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 c Spelt flour
1 pk Quick-rising dry yeast
2 tb Sugar or other granular-sweetener
-Pich of salt
2/3 c Very warm soy milk(if not going for vegetarian, use regular milk)
2 tb Melted margarine

In large bowl, combine flour, yeast, sugar, and salt. Stir in soy milk and
1 Tablespoon melted margarine until dough forms. Turn dough out onto
floured board and knead about 3 minutes or until smooth.
Grease mixing bowl and place dough in bowl, turning to coat lightly. Cover and place in warm spot away from drafts. Let rise about 30 minutes.

Heat oven to 350 degrees. Place dough on greased baking sheet, or, if
desired, bake in greased 8- x 4-inch loaf pan. Brush with remaining
tablespoon of melted margarine and bake about 25 minutes or until golden and loaf sounds hollow when tapped on top.
 
Glad the cookies were a hit and they turned out well for you!

I had to open a 20 oz. can of crushed pineapple too (I just ate the extra few ounces) and smooshed the heck out of it to get rid of the excess juice, lol. I was kind of concerned they'd turn out dry, but they're fine. I'll be making them again for sure.

My DD likes them better than the ANZACS cookies so the plan is to make them for Christmas baking
