Any Home Bakers Here?

@sunflour So glad the apple cake turned out well for you! It's easy and fast plus it's yummy! I'm sure it will come in handy with holidays coming up. I think it would be good to have with coffee and tea.
The only problem I had was deciding when it was done, but it was great with coffee.

@ronott1 , after we finish the apple cake have got to try that strusel.

I think I will have some more...with vanilla ice cream on top....

Lol i also made tortillas with lucy today she had fun with both. And yah i suppose lol i been craving french bread just couldnt convince myself to go buy it and i wanted to make it anyways so it all worked out.
 
Years ago I bought a nutrisystem cookbook, you know always on a diet. in it have have found several favorite recipies. One in particular, I have started eating every morning. I try to talk myself into something different, give it a go and return to my favorite before the week is up. This is my recipient for Blintzes.

The perfect Crepes
1 TBSP oleo
2/3 cup flour
1/4 cup whole wheat flour
1/4 tsp salt
2 egg whites
10 Oz skim milk

I combine the dry ingredients then add the liquid. It should be free of lumps. I heat a small non-stick pan, spray it with cooking oil, and add 1/4th cup batter. Tilt the pan quickly and let the batter completely coat the bottom of the pan.
Cook for 40 sec until it solidifies. Quickly flip the crepe over and cook for 20 sec. Repeat the process.

Filling:
2 cups low-fat cottage cheese
2 tps lemon peel
1/2 teaspoon cinnamon
4 top sugar

Combine the ingredients. Place 1/4 cup filling in center of each crepe. fold crepe over filling forming a square packet.
Heat skillet and place blintz seam side down and cook for about 2 min. Turn over the blintz and cook 2 more min. Serve immediately.

This is the actual recipe. Personally I just mix the batter up and then refrigerate the unused batter for the next day. I also mix the filling up and save it. Then instead of making a fancy square I just roll the crepe with the filling inside and microwave it for 30 sec. (not much of a morning person, so I try to keep it easy) I have also tweaked the recipe as I have made it through the years. I skip the lemon peel, the salt, and the oleo.

Each Blintz has about 125 calories, I usually eat 2 a morning.

Finally, here is a picture of my Halloween goodies, witches hats and ghosts:


I think the ghosts would have looked better if they had been completely covered in the white chocolate but that would have taken 2 bags of the chips and I only had 1. Oh well, it looks like DH and I will probably eat most of them anyway, so probably best like this (save all those calories you know).
