I'm thinking Carolina Reaper for some heat

Phil, the posts you sent the other night of your "on the air live" experience with this pepper were hilarious. Those things should come with a warning label on them, lol.

Start like you would all good things--brown an onion along with a diced jalapino and add a tbl. of tomato paste and thn a couple of pressed or diced cloves of garlic; cook for a minute. Toss in your pound of soaked beans and then add 6 cups of water and some salt. Bring to a boil and let simmer until tender--something like two hours.

When beans are about done, brown the ground beef. Add some salt--like half a teaspoon. A similar amount of black pepper and a teaspoon of cumin.

Add to the cooked beans and then taste for spice. If it is not hot enough, add some Grandmas chili powder--not a chili mix packet. For the really adventurous, add 1\4 to 1\2 tsp of cayenne powder.

Variations:

Use a habanaro pepper instead of the jalapino
Add half a bell pepper to the onions

Top with grated cheddar cheese and bake some corn bread!

I especially like the idea of cooking the beans with the onion, pepper, etc BEFORE adding the browned beef - would never have thought of that. And not a big fan of garlic if you can taste it after you finish the meal but a couple of cloves should add some zest.

What kind of dried beans do you use?

Thanks again, will definitely try this soon. Just a few additions for my preference is canned tomatoes and tomato sauce - I like it really tomatoey with a dash of tobacco sauce.

I agree brown an onion and then cook your meat. My family always adds some vinegar and brown sugar to our chilli. Vinegar really brings out the taste. Just about 2 or 3 TBSP per pound of beef.
And here we like to eat our chilli with cinnamon rolls.
Interesting, would never have thought about cinnamon rolls and sweet chili :)
 
DH & I used to sell Ghost Peppers in our store and had some of the funniest customers for those. The ones that used to worry me were the customers that would buy them for their bosses, as a surprise. Hope there was no loss of employment due to our peppers! Then there was the little 8-year old girl that could eat them like candy. Wow!

I don't think I could even hold one, much less taste it.

Wonder if the girls tongue had scars?
