Any Home Bakers Here?

With the Thanksgiving going on and all the turkeys, I thought I'd share something my DH did the other night. I recently bought a turkey at the supermarket and asked him to toss it in the oven for us, along with some potatoes. We had some good sized zucchinis here, so he decided to slice one and add it to the baking dish, along with the bird and the potato wedges (and some sunflower oil of course). And afterwards regretted not adding a whole lot more! Oh my gosh, they turned out heavenly

I could happily have eaten a plate full of that zucchini and skipped the bird completely lol And that turkey came out nice too! If you guys have some zucchini left from summer, give it try? It's yum!
Never thought about squash for Thanksgiving. I'm only familiar with Summer Squash, and never tried Zucchini and we also usually cook our turkey with just a celery platform. Guess I need to expand my culinary taste..LOL. I only want to cook Turkey to get the dressing…

I haven't gone through all of the posts but...

My husband has Celiac, basically can't have any wheat or gluten. Does anyone have stuffing recipe that does NOT have gluten? I a bread machine that will season the bread but have no idea what seasonings or how much, I have an onion and celery and how much chicken broth. Please, we are a stuff in the bird AND bake the stuffing type people. We haven't had stuffing in 5 years since he was diagnosed. He doesn't like apples or mushroom. Parts of the bird are ok.

I'm begging, so is hubby, you wouldn't believe how much we miss it. I don't have home-made "cream of mushroom soup" if needed and other things since I've been dealing with this for a while.

I have a wild rice one from my grandmother: Celery, onion, walnuts, wild rice.
I will dig for the recipe tomorrow if you are interested.

Why can't you just use Gluten Free Bread and make it by your past recipes?
 
To be completely honest with you my mom always made the stuffing, she passed away 3 yrs ago and we just cheaped our way out using Stove Top.

I did try one year and the problem with trying gluten-free breads is most of them are full of nuts and grains. Does NOT have the same texture as stuffing. My mom always used Ms. Cubbings (I think)

Or if someone could give me the seasonings I could make a loaf of G-F bread with the seasonings in it and then add celery and onion.

What I meant to say is I don't have to worry about Cream of mushroom soup, this is AMAZING soup but it is to be canned

CREAM OF MUSHROOM SOUP

• ⅓ C. Butter
• 1 lb. Mushrooms, chopped or sliced
• ¾ C. Clear Jel
• 2 quarts Beef Stock / Bouillon may be substituted
• 1 tbsp. Salt
• 1 tsp. Lemon juice

Melt butter.
Add mushrooms and cook until brown.
Add meat stock, saving enough to mix with the flour.
Make a paste with meat stock and Clear Jel.
Mix all ingredients and heat until it boils.
Put in jars and process in pressure canner for 45 minutes at 10 lb. pressure.

Makes 6 Pints I usually triple it
