Any Home Bakers Here?

We are getting started with our thanksgiving prep today. We baked the pumpkin and made two batches of sourdough english muffins and now we are making pumpkin bread @NorthFLChick recipe she posted last year. Mmmm! The pumpkin is so meaty we have more then enough for bread and pie.
 
To be completely honest with you my mom always made the stuffing, she passed away 3 yrs ago and we just cheaped our way out using Stove Top.

I did try one year and the problem with trying gluten-free breads is most of them are full of nuts and grains.  Does NOT have the same texture as stuffing. My mom always used Ms. Cubbings (I think)

Or if someone could give me the seasonings I could make a loaf of G-F bread with the seasonings in it and then add celery and onion.

What I meant to say is I don't have to worry about Cream of mushroom soup, this is AMAZING soup but it is to be canned

CREAM OF MUSHROOM SOUP

•             ⅓ C. Butter
•             1 lb. Mushrooms, chopped or sliced
•             ¾ C. Clear Jel
•             2 quarts Beef Stock / Bouillon may be substituted
•             1 tbsp. Salt
•             1 tsp. Lemon juice 

Melt butter. 
Add mushrooms and cook until brown. 
Add meat stock, saving enough to mix with the flour. 
Make a paste with meat stock and Clear Jel. 
Mix all ingredients and heat until it boils. 
Put in jars and process in pressure canner for 45 minutes at 10 lb. pressure. 

Makes 6 Pints  I usually triple it

Have you tried making bread with rice or almond flour? If you have a natural food store they might have some more bread options or is there a gluten free bakery close to you?

I hope you like the pumpkin bread Alice. Good for you on starting early! I'm still trying to get motivated enough to go to the store for some last minute things.

I loved it last year, so excited for it this year! The one pumpkin, and I got a small one, made 8 cups of pumpkin! So I'm freezing 4 cups and put 2 1/2 aside for pie and a little over 2 cups for the bread.

I really have no choice but to start early. I work all week except Thursday and Friday, so have to try to do some each day so thanksgiving runs smoothly. The daycare kids and my son enjoyed helping me make the english muffins today. My son helped with the pumpkin too.
 
That's an amazing amount of pumpkin to get from one small one, way to go! Did you grow it or were you able to find some in a store?

The local pumpkin patch. It's the same kind I got last year. It's called a winter luxury pumpkin and they said they are the best pie pumpkins. Very meaty, not much for the "pumpkin guts" and seeds.
 
@Heidi65 I make a traditional southern dressing and any type of staled bread would work. It is flavored by sautéed celery with onion, salt and pepper. Using chicken broth, raw eggs, a little milk, and chopped boiled egg and cream of chicken soup. Very simple, but that's what I grew up on.

If the above sounds like what you are looking for, I can post the recipe tomorrow night. But you may prefer one with more herbs? A lot of folks like sage, but it's not a personal favorite.
 
I want to get bees....that's on my list next year...although I heard they can't over winter here. Too cold I'd sure like to try and over winter them though. My dad had hives when I grew up but that was downstate by Detroit. It's a lot warmer there.
My cousin had bee hives for a couple of years, but lost them all to a farmer spraying fields. He was north of Green Bay, up by Marinette/Menominee, so there are ways to have bees in the north.
