Any Home Bakers Here?

I am wondering if anyone has a good Corn Bread recipe?
started some Chili in the crock pot for tomorrow I figure if I still feel icky I will sweat it out with the chili

I know northern roots are showing with kidney beans in the chili.

and truth time I usually use Jiffy corn bread mix (I add frozen corn to the mix so it looks homemade

Grandmother's Buttermilk Cornbread

"Grandma's recipe for a sweet, moist cornbread likely to become your favorite!"
Ingredients:
1/2 cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk

1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
Directions:
1.


Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.

Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended. Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
3.

Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
 
Okay so dumb question, but is cornbread just eaten with chilli or other gravy type things or would you just eat it by itself buttered say? It looks interesting.

Cornbread with butter and honey is to die for. That is the only way I like to eat it, warm with butter and honey. It is eaten as a side, not topped with gravy

It is for eating any time!

I freeze the leftover portion and heat it up with breakfast too.
 
Ahhh I thought it must have been like a dinner roll, there to mop up the liquid from the chilli. Will have to try this.

Yes! Butter & honey or blackstrap molasses & honey. Good with chili, or can be eaten plain. I like it in a glass of milk as well.
 
I had a piece of cornbread this morning for breakfast, warmed it up in the toaster oven, spread butter all over it and topped it with red currant jam. Mmm.

And I use the Jiffy Mix too. I've tried 2 or 3 different recipes for making it from scratch but always go back to Jiffy. Guess I'll just blame that on the way my Mom cooked

Corn bread and chili were a winter staple when I was growing up. As a grown up I am the only one who will eat it but I still love it so I make it up and can the left overs.

I have heard of cornbread being made into stuffing for the holidays as well. It is a Simple treat that brings warm memories.
