Yes I make my own crust.

1¼ cups all-purpose flour ½ cup shortening chilled
¼ teaspoon salt 3 tablespoons ice water

Whisk the flour and salt together in a medium size bowl, with a pastry blender, cut in cold shortening until the mixture resembles crumbs. (for this step I usually use my food processor and put the flour, salt and shortening in the food processor and pulse it until I get the desired results then I put it in my Kitcheraid bowl with dough hook).

Drizzle ice water over the flour a few drops at a time while tossing mixture with a fork to moisten until the dough comes together. (or mix it on #! until the flour blends in somewhat then put it on #2 on your kitchenaid and kneed for a few minutes until all the flour has incorporated)

Roll dough into a ball, wrap in plastic wrap and chill for at least 30 minutes before rolling out.

Roll out dough and put in a pie plate. Fill with desired filling.

For the first time in a number of years, I made Chocolate No-Bake Cookies. Oh man, now I remember why I quit making them...they're too good!

I made my sour dough bread. The texture was good and the taste was good too but it did raise but not as much as I would have liked. Now I'm attempting sour dough onion bagels. The dough so far is raising nicely.

cmom, would you mind sharing your bagel recipe? I've tried a couple recipes but they never turned out quite right. I'm still searching for "the" one!

Bagels

1½ cups warm water
2 packages yeast or 4 ½ teaspoons of active dry bulk yeast
3 tablespoons sugar
1 teaspoon salt (for onion bagels use onion salt)
3½ cups bread flour
2 quarts water, to boil
1 egg white
(optional) You can add anything you want such as cinnamon, raisins, poppy seed, dried onion or garlic

Directions
  1. Mix yeast, sugar, and warm water together and let stand 3 minutes
  2. Mix 2 cups of flour with the salt in a large bowl and add the yeast mixture
  3. Stir until combined and slowly mix in the rest of the flour ( if using optional ingredients, add these to the dough now).
  4. Knead on a floured surface for 5 minutes, adding additional flour if needed, dough should be firm.
  5. Place dough in a greased bowl, cover and let rise until double.
  6. After rising punch dough down and divide into 12 balls.
  7. Allow to rest for 4 minutes.
  8. Bring 2 quarts of water to a boil.
  9. With your thumb, make a hole in each ball of dough and pull open to about 2 inches, making a bagel shape.
  10. Place the bagels onto a cookie sheet and cover for 10 minutes. (I use parchment paper on a cookie sheet.)
  11. Preheat oven to 350 degrees,
  12. Drop 2 or 3 bagels at a time into the water for about 45 seconds, turning each once.
  13. Drain and place on greased baking sheets. (often times I use paper towels or parchment paper on a cookie sheet.)
  14. Brush tops with beaten egg white and top with optional toppings.(optional, I use the egg white wash if I want to put on toppings and other times I don't when I'm not adding toppings)
  15. Bake for around 35 minutes.
  16. Bagels are done when they are golden brown and shiny.

I usually use my Kitchenaid for mixing and kneading my dough. I hope this recipe works well for you. I have tried a lot of variations and it works best for me.

My first attempt at sour dough onion bagels. They might not look too pretty but I hope they taste good. I was pretty sloppy at rolling them out this morning. In a hurry. have to feed birds today and sort the eggs. I'm taking some of the eggs to sell at a swap meet Saturday because I have sooo many. Sold a lot of eggs at the last swap meet. We sell a lot of eggs at our farm but the girls are laying great and the ones that were on vacation are now laying again. Soon what we call snow birds will be heading back up north and we do have quite a few that buy eggs from us. Soon it will be time to sell some birds to make room for the new hatches and I'm still working on setting up my breeding pens and putting up new wire in between the pens to separate the birds as I put certain males with certain females to get the best possible chicks. I have some of the pens done but still a few more to do. My husband has Parkinson's so it is easier for me to do it myself but it really isn't easy for this old lady. My mind say's I'm still young at heart but my body doesn't agree.
