1¼ cups all-purpose flour ½ cup shortening chilled
¼ teaspoon salt 3 tablespoons ice water
Whisk the flour and salt together in a medium size bowl, with a pastry blender, cut in cold shortening until the mixture resembles crumbs. (for this step I usually use my food processor and put the flour, salt and shortening in the food processor and pulse it until I get the desired results then I put it in my Kitcheraid bowl with dough hook).
Drizzle ice water over the flour a few drops at a time while tossing mixture with a fork to moisten until the dough comes together. (or mix it on #! until the flour blends in somewhat then put it on #2 on your kitchenaid and kneed for a few minutes until all the flour has incorporated)
Roll dough into a ball, wrap in plastic wrap and chill for at least 30 minutes before rolling out.
Roll out dough and put in a pie plate. Fill with desired filling.
