Any Home Bakers Here?

Yeah agree. Problem often is though when you read feedback on blogs it will be 50 people saying it looks great definatly going to try, nobody actually commenting after they have actually made it though.


That is also true. I just leave those, and find one similar that has good reviews. I hate it when people comment and say they are going to try. Just post it when you are done making it people!!

I know what you mean.......but there are those with great reviews and ALL reviewers made major changes in the recipe

And a lot of the recipes on-line and in magazines these days are directed at the quick and easy using all packaged ingredients :(

And I still use my BHG 1971 cookbook - I did buy a new one about 10 years ago and promptly gave it away :) But back then raw eggs were safe, and adjusting those recipes has been the challenge.
 
Well, I just put a Pineapple Meringue Pie in the fridge to chill. Now I am making some appetizers. Biscuit dough in mini muffin tins with a Bacon, Cheese, Garlic, Tomato, Basil, Mushrooms, and Mayonaise. Company tonight is bringing dinner, but I am providing dessert and appetizers!
 
Ooh Pineapple meringue pie is on my to do list! I even bought the ingredients last summer but they are still sitting in my pantry. Ive never tasted one before but it was a recipe from my grandmother that I need to make to photograph for the family cook book I'm making. Maybe I should get to it! Lol

It was good! I was a little bit less than pleased with the meringue, I should have beat it for about 45 more seconds and baked it about 90 seconds more and it would have been perfect!! I will post pics and my recipe tomorrow if I can remember to.

Sourdough Blueberry Muffins

This is a great way to use an extra cup or two of sourdough starter. This is a quick bread so no rise time involved. Just mix and pop into the oven. As with any muffin, take care not to over-mix.
If you desire a sweeter muffin, increase the sugar. Also, depending on the size muffin pan you use and how full you fill the cups, will dictate how many muffins this recipe will make. Often times I double the recipe.

Ingredients:
1 egg
¼ tsp salt
1 cup sourdough starter
1 tsp baking soda
½ cup blueberries
1 tsp vanilla
¼ cup oil
1 cup flour (I use whole wheat)
¼ - ½ cup sugar

Preheat oven to 425ºF.
Combine dry ingredients in a bowl, add wet ingredients to dry ingredients (being careful not to over mix). Carefully fold in blueberries.
Prepare you muffin cups by oiling them and dusting them with flour or spray the cups with oil with flour in it like Baker’s Joy (I use the paper cupcake cups). Fill the muffin cups with the muffin mix. Again, depending on the size of your muffin cups and how full you fill them will determine how many muffins you will get. Estimate around 6 to 8 muffins.
Bake at 425ºF for about 20 minutes.
