Do you make your hash browns from scratch?

My mom used to make potato/onion kinda like a stir fry. I have tried to reproduce but never hit it right. Anyone do this?

Sorry was out watching my birds.. nope buy hashbrowns in a box add water if I do fried potatoes then we cut them got so easy to buy the idaho spud potato hashbrowns in a box works out to like 23 cents a box buy 12 at time Coscto

Of course!

First grate them with the largest size you have. Try different oil to see what is right. Cast iron only. Diced onions on top of potatoes at last turn. Let them cook several minutes and turn them long enough to lightly brown the onions.

Salt when first added. Salt at first turn. Taste for salt at third turn. I use a shaker, don't add too much. Pepper on first turn.

You can add Bell or hot peppers the same way as the onions. Garlic is too.

When you tun to cook the veggies, You can grate a half a cup of cheddar cheese on top. Cast iron is magical for melting cheese like that!

Today or tomorrow I'm going to make one of our favorites to use up left over turkey, Pecker Pie! I use the turkey and add vegetables plus some gravy like a pot pie filling then cover it with mashed potatoes on top (like a shepard's pie). Bake it in the oven till everything is hot. Add a tossed salad, and it's a good hot meal.
 
Now that Thanksgiving is past, I suppose it's time to decide which Christmas cookies I'm going to make this year. I usually make most of the dough ahead of time and freeze it. Then bake all the cookies closer to Christmas, so they're fresh. Trying to cut back on the amount of cookies I make (for health reasons), but I want to make all the favorites, so it's hard! We also like to give some away to the nice people at the post office, people Hubs delivers to, etc.

I shred my potatoes and then soak them in water to pull out the starch and then fry them in shortening or vegetable oil...salt and pepper to taste and put cheese on top to melt after last flip.

I know this sound dumb :oops: but you do mean RAW potatoes?

How do you do the freezing? Mix dough and immediately freeze? And how do you defrost and cook. Guess I'm sounding dumb again, but never tried make ahead dough.
