Any Home Bakers Here?

I am about to roast coffee beans, bake blue berry banana bread and Maybe blue berry muffins. It is time to stock up the freezer!
I just made homemade blueberry muffins(forgot the vanilla but are still yummy)for the first time and also made banana chocolate chip pecan bread.

Blueberry Muffin Recipe
  • 2 ½ cups Flour (Heaping)
  • 1 teaspoon Soda
  • 3/4 cup Sugar
  • 1/2 teaspoon Salt
  • 2 eggs, beaten
  • Zest of a lemon
  • 1 Tablespoon lemon juice
  • 1 cup Buttermilk
  • 4 ounces Butter , melted
  • 1 ½ cups Blueberries, fresh or frozen(10° frozen)
Sift dry ingredients together in a large bowl. In another bowl, whisk eggs, lemon zest, buttermilk and butter that has been melted and browned slightly. Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.
Fold in blueberries. Spoon batter into greased muffin cups and bake until golden brown. Bake at 400 F for 20 -30 minutes.
Makes 24 blueberry muffins.

Variation:

Take 1 1/2 cups of fresh currants, place in a small saucepan, cover with water and bring to a boil. Remove from the heat, cool and drain. Use the prepared currants to replace the blueberries. Replace 1/4 cup of sugar with 1/4 cup light colored honey (preferably home grown) and you will have delicious currant muffins.

Them sound yummy...love stuff with buttermilk! Thank you!! Does heaping mean closer to 3 cups then?

no, just that the cups are a bit full as you measure. Should use something like heavy as opposed to light cups. Heaping is a very old fashioned way of measuring.
If you are using all purpose flour you will use less flour. Bleached would need more.

Wow! This is getting a bit into geek cooking stuff....
