My maternal grandmother's upside down cake recipe calls for canned apricots.

Those would be very good! The butter and brown sugar pairs nicely with peaches so apricots might be even better!

well a tad nervous as it keeps saying to keep it chilled to work it but does not roll uni-formally cold

I love upside down cake! I need to try in in the jumbo muffin pan. I like using peaches and I have some canned peaches!

I haven't made an upside-down cake for a long time. I do occasionally make peach cobbler with canned peaches, though. So good!
