I once made a fresh pear upside down cake, it was pretty good, but never thought about peaches. Thanks for the tip.

You are in the Peach State...you should be making peach everything! Especially since you have such tasty ones :drool

Yet our last winter was too mild, so no Elbertas :hit...but we are having plenty of cooling hours over the past week.
 
My maternal grandmother's upside down cake recipe calls for canned apricots.
Those would be very good! The butter and brown sugar pairs nicely with peaches so apricots might be even better!
 
well a tad nervous as it keeps saying to keep it chilled to work it but does not roll uni-formally cold
It probably depends on how cold the house is
