I'll share my favorite muffin recipe.

Cinnamon Buttermilk Muffins

5 tbs. coconut oil melted
1/2 c. packed brown sugar
2 eggs
4 tbsp. honey
2 c. all-purpose flour
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. buttermilk
1 1/2 tsp. vanilla extract

Mix dry ingredients. Add wet in no particular order. Don't overmix. Bake at 350 degrees 20-25 min. You can also bake them at 325 if your oven runs a little hot. Butter works beautifully as a substitute for the coconut oil. They are extra amazing with streusel on top, but it's really not necessary.

They sound delicious!

I will post the Bran Muffin recipe when I get home tonight. I need to mix up a batch anyway. I buy bulk wheat flake cereal at the local Mennonite store, it doesn't have raisins in it. Growing up, I always picked the raisins out and threw them away. i like raisins, just not baked, boiled, or cooked in any way.
