Tonight we're trying zucchini ravioli & lasagna... where the zucchini is the pasta. Instructions say to cut the zucchini so it fits your potato peeler, then use the peeler to get paper thin slices. Make a traditional cheese filling, marinara sauce. take four slices of the zucchini and make a T... two horizontal and two vertical. Vertical goes down first. Put a table spoon of cheese mix in the middle and then fold the top over, then one side, then the bottom and finally the last side. Place seam side down in a baking pan. Add Marinara and cheese and bake at 375 for 30 minutes until cheese starts to brown and zucchini is aldente, then top dress with a mix of parm and fresh basil. I of course also added fresh Italian parsley. The lasagna is in the oven (DS didn't read instructions and tried to hand slice the zucchini... so cooking it for 45-60 minutes. Had to take a break as we're finishing up the ravioli as the baby pigs got out... ARG, they've figured out how to escape.![]()
I am about to fire up the pellet BBQ and the see how the Boule tuned out
