Any Home Bakers Here?

I have stumbled across this lovely 'little' thread and have skimmed though some of the recipes. I enjoy cooking and baking and tend to stress bake for some strange reason. :lol:

The reason I posted something was to ask you guys a question. What is your go to recipe for using eggs?

My bantams laying has picked up and so has my muscovies. My standard chickens are just now starting to lay too. Soon I'll be over run with eggs! What recipes you use with an abundance of eggs to go through?

scrambled but you can freeze them for leaner times also
do you have people to sell them to

I do give dozens away to friends when production goes up. I've heard of freezing them before. How exactly to you freeze eggs? In muffin tins?

That seems perfect! The whites go the the cake and the yolks go to the curd. I'll have to break this out one day soon!

I like to make Challah bread with extra eggs. Or egg nog (we'll drink that any time of year).

Bread pudding and custards use lots of eggs. Easter is coming, and the churches usually have a breakfast. Your eggs will be a blessing!!
Even brown eggs can be painted if your community has an egg decorating event.
For freezing, ice cube trays are the right size. Add salt for cooking, sugar for baking. Unfortunately, I forget the amounts.
I used to make omelette shells (or complete omelettes), and stack them between paper. It made breakfast faster, and I could always break it up for scrambled eggs.

Pre-cooking omelettes sound like a good idea! Do you freeze yours or refrigerate them?
