Looks like a good recipe!

One thing I liked about it was that the chicken was made all in one skillet. The fewer the dishes I have to wash, the better :lol: Plus, it was easy (and good).

The chicken breasts I had were kind of big and meaty, so I only used 3 breasts and pounded them to about a 1/2" thickness. That was enough to fill the skillet.

I know they're going to enjoy that package Aria, there was some good stuff in there! I think it's nice they got it a little after all the Christmas hubbub was over, now they have time to really enjoy it.

Chicken Jambalaya Bake

Chicken fryer, Cut up
2 tbl. Chili Powder
⅓ Cup olive oil
1 Clove Garlic Crushed
1 28° Can tomatoes + Juice
⅛-¼-½ tsp Cayenne powder (depending on how hot you like it)
⅔ Sifted Flour
3 tsp salt
1 Onion Coarsely Chopped
⅔ Cup uncooked rice
¼ cup water


Preheat oven to 350° F. Dredge Chicken by shaking in a bag with flour, Chili and 2.5 tsp. salt; brown in oil in a large heavy kettle and drain on paper toweling; pour off all but 3 tbl. Drippings. Stir-fry onion, garlic and rice in drippings 3-5 min over moderate heat until rice is golden. Mix tomatoes, water, cayenne, and remaining salt and heat, stirring until mixture simmers. Return chicken to kettle, pushing down into liquid. Cover and bake 1 hour until chicken and rice are tender.
