Gee Thank you nice recipe now buttermilk? crap how do I make buttermilk
from regular

You can make buttermilk from adding a bit of vinegar or lemon juice to regular milk. For the muffin recipe, I added 1 Tablespoon lemon juice to regular milk to equal the 1 cup needed for the recipe.

Let it sit a few minutes to thicken up.

How big are the perch? I used to catch those all the time when I lived in North Idaho.

Being a fisherman myself, I usually just fillet them, take off the skin, then pan-fry them in butter.
there decent size. maybe a bit over half a pound. enough to make good fillets out of them :)

we catch tons of perch in the winter and only the odd one in summer. what time of year did you catch your perch (just wondering if you don't mind)

Here you go DMC. I don't know that it's any different from other berry muffin recipes, but this one worked well for me.

Blueberry Muffins
(makes 6 jumbo or 12 regular size)

2 1/2 Cups AP four
1 teaspoon baking soda
3/4 Cup sugar
1/2 teaspoon salt
2 eggs
1 Tablespoon lemon juice
1 Cup buttermilk
4 oz. butter (a stick), melted
1 1/2 Cups blueberries, fresh or frozen

* Preheat oven to 400*.
* Whisk dry ingredients together in a large bowl.
* In another bowl, whisk eggs, lemon juice, buttermilk and butter.
* Stir wet and dry ingredients together just until combined (do not over mix)
* Fold in blueberries.
* Spoon batter into greased muffin pans (I used no-stick spray) and bake until golden brown. About 20-30 minutes or until a toothpick inserted in the middle comes out clean.
* Cool on a wire rack for about 10 minutes, then remove the muffins from the pan and let cool completely.
Thanks Debby!
