You need really ripe (brown & rotty looking) to get the banana flavor. Next time take your yellow bananas and toss them in a hot oven for about 15 minutes...ripens them right up!
 
You should try KAF sourdough chocolate cake! It's excellent AND uses unfed sourdough! Just disregard the part of the instructions that says to "gently" blend. It's a gooey mess that requires more than a "gentle" blend. lol The cake is really good.

My Grandpa used to have a similar complaint about banana bread! Why use rotten bananas in a cake...If you would not eat it then toss it in the trash!
