Any Home Bakers Here?

Yes! nice bread!

Flour has varying amounts of moisture in it. The amount of flour is always a range in bread baking. You will learn by feel how much to use. If a recipe calls for three cups or flour, start with two cups and add flour half a cup at a time and then a quarter cup at a time until you get to the stiffness you know will make good bread. And then knead until you get the window effect when stretching the dough
Yah I’ve been taking notes as I go and I’ve been consistently using 1/2 - 3/4 cup LESS of flour than called for, my house is very dry.
It passed the taste test too! So stretchy this time, like store bought - it just doesn’t smell as yeasty as before, maybe from the pizza yeast

actually not seeing the yeast for pizza here .. Do imagine I could find it on Amazon but have yeast bought ... think I will stay with it :fl
Yes I would have preferred regular but couldn’t find any, anywhere. I don’t usually stock up on it because it doesn’t last so I just buy a new jar when I’m close to the end of the old one. But that was in the old days before covid panic and the stores emptied of everything :(
There was still lots of marmite though lmao, guess no one wanted it?

I made this for dinner one night this week. Just an easy bread recipe baked on a pizza stone. Oven omlete made with quail and chicken eggs. Bread sliced with tomato juice from tinned tomatoes (the tomatoes went in the omlete) topped with cheese and coriander and warmed in the oven yum!

Think I'm going to make a small loaf tomorrow in a tin.
