Any Home Bakers Here?

Wow, skip a day and there is a lot of catching up to do! My 10 year old granddaughter and I baked all afternoon yesterday. She loves English muffins so I set her up with the recipe and the ingredients and she was in heaven! I made a rhubarb/berry cobbler which called for sourdough starter in the topping. I have SO much rhubarb now it seemed a shame not to use some!

That sounds like a fun day Sequel! And delicious too :D
 
OK I need advise on this Kings Hawaiian Bread like recipe
6 cups all-purpose flour, plus an additional 1/2 cup flour, divided
3 eggs
2 cups pineapple juice, room temperature
3/4 cup sugar
1 teaspoon vanilla
2 (1/4 ounce) envelopes yeast
1/2 cup (8 tablespoons) butter, melted

The taste was good but the problem was the dough was not tacky, as recommended, it was sticky.. I added more AP flour than the recipe called for, trying to firm it up enough to be a dough. I probably used 9 cups. It also rose completely out of my bowl- and it was my usual bread making bowl.
IF I cut the pineapple juice down by half and the yeast to one envelope, do you think it would still come out ok? Or should I decrease the number of eggs? I really don't want to waste a lot of supplies to find out no, you can't do that. Any help would be appreciated.
I love love love Hawaiian bread and thought this was the answer to my dreams. OH well.

I've never made that recipe but it sounds like a lot of liquid. Instead of putting it in all at once, I'd put in maybe half to two-thirds and see how the dough feels, and add a little more if feels too dry.
 
No, electric. Old stove and new. When I first got either of them I compared the settings to an oven thermometer too. (though I realize the thermometer could have been off)
And thank you. I thought 3500' was the line. I'll start reading up on altitude changes.
2000 ft is not much of a difference. My Mom's place it at 4200ft and there is a difference there

It has taken me a long time to get things to turn out right. And sometimes they still don't even with the adjustments.
I have that problem sometimes ... and I haven't changed elevation ;)

It didn't even occur to me to think about that until I was browsing some regular recipes and I saw a mention about changing the baking powder level and thought...Hmmm, we (GF bakers) already have to use more BP and BS, how would I begin to figure those out?

I've got some ATK (America's Test Kitchen) GF books, hopefully they have something in them too.

America's Test Kitchen usually has some good information and recipes...hope they have something helpful to you!
 
I baked some brownies yesterday. Chocolate, and I split them in half and spread some peanut butter stuff in between the layers.
It was only one tray -- which is barely enough to survive one night in my house -- and they're all gone now... I only got one and a half. Tasted good, though, and I'm glad the everyone liked them.
I didn't bake anything today, but I did make some marzipan.
