Baking this morning Peanut butter cookies and devil foods cake baking still

I braved the heat and smoke from the fires today and bake bread!

It is the Champlain sourdough bread large version in the google doc linked to in the first post of this thread.

I got a good rise on this one for sure!

nice! I am new to sourdough, and have Whoppie Goldberg on my counter--Day 5 she's gluten free. Ordered a Banneton basket from Amazon---should be here in time for my first bake

@NFC, it was your pizza dough recipe. My family has grown to love it. I find that it works a little better if I preheat the oven with the pizza stone inside it, and then when it reaches 450, I put the pizza dough on the stone, and then put the toppings on and stuff then pop it in the oven for 15 minutes. Perfect crust!

Anyway, I just got out of a doctors appointment, I’m being put on a new med. Here’s hoping it helps out a little bit.

We have some fires going on in Eastern Idaho. The smoke has gotten so bad that at sunset you can stare at the sun without getting hurt. I actually got a picture of it. It’s pretty creepy.

I used a banneton basket for the bread.

One trick I learned is to use rice flour on the basket. It does not bind with the wheat flour so the bread releases better. It also let me get some very nice slashing on the bread too
