Raisin Bread Two loaves 9 x 5 tin
5 1/2 cups bread flour
1 T yeast
1/4 avacado oil 1teaspoon cinnamonView attachment 2348096
1 cup raisins
1/4 cup molasses 1/4 cup honey
2 cups warm water
1 teaspoon sea salt
Mix...knead 10 minutes. Place in greased bowl cover/warm place
1 hour double. Shape ..place in greased tins Bake 400 degree oven
35-40 minutes.

@Aria. Crumb is still too tight. I am blaming my kneading ability after back surgery.
I’ll give it a 7/10. Needs practice
That bread looks yummy to me, it's risen well and beats mine.
Please take care with healing after surgery.
 
Cup of starter, active. Not out of fridge or just fed.
5 cups flour, I use Gold Medal bread flour
2-1/2 teaspoons salt plus a pinch
1 teaspoon sour salt (citric acid)
1-1/2 cups Luke warm water

Mix everything except dry flour together first. Then add flour.

I knead the dough until it passes window pane test. Toss in bowl for an hour, then portion out into pans. Let it double and bake.

It’s a King Arthur flour recipe. Can’t seem to improve on it (except adding sour salt and a pinch extra regular salt)

EDIT: Makes two small loaves, or one larger loaf if your bread pan is larger than average.
