Nice!I love Paul Hollywood! He is my favorite. Watching him knead dough, he makes it look so easy.
On another note, I have made the Fluffy Biscuit recipe twice now. The first time the texture was off, although they rose really well, the texture seemed a touch grainy. The second time I made them, I used 1/2 bread flour and 1/2 AP and they came out perfect. I also kneaded them more the second time. My failure as a baker has been resolved, I can now make Baking Powder Buscuits!! yay! No more Biscuit mix for me.
It is ok to knead the biscuit dough! Just not too much or the gluten will make them too stiff-- rubber like.I guess we prefer slightly stodgy to the grainy, fall apart biscuits of the first batch.
They actually had the same rise, just the second batch held together better.
We couldn't even put butter on the first batch without them crumbling. And what good is a biscuit without butter melting on it..
