Any Home Bakers Here?

Im looking at a recipe that asks for potato flour and I cant get it. Looking at the food shop website they have cocount flour.. cornmeal/flour. What should (can) I use instead. Could I use instant potato?

The potato flour is completely optional if you can't find it. Potato flour feeds the starter is all so would make it rise a bit more

NFC, I made your pizza dough for a friend of mine who was going through a foot surgery. It was a hit at her house. That’s what I heard.

Anyway, handyman Jared does it again. Do you all remember the organ that I showed you and bought? Well, it had a very loud hum. After cleaning a lot of connectors with WD 40 specialty Contact cleaner, I fixed the organ and the hum is gone!

I use the KA Basic Sourdough as a sandwich bread. It's easy, takes almost no time. 7 minutes in the Kitchen Aid mixer to knead, let it sit in a bowl for a time then stick it in the pan for second rise then the oven for 45 minutes. Uses "2 cups" (454g of starter) so heavy there. Dry ingredients are 1.5 tsp sugar, salt and yeast. 298g flour, I ALWAYS 50/50 with wheat flour.
I made a loaf for my Farmer's Market friends and took it to their house when I picked up 16 pounds of ground beef and 50 pounds of potatoes today.

DW has several "cacti", TGiving, Xmas, Easter that she's kept for several decades.
I don't think she fertilizes them much at all and does let them get somewhat dry before watering again.
