Any Home Bakers Here?

I think I killed my puff pastries. They are supposed to be lemon curd filling. The finning and tast is great. The looks... well they have some issues. His do I stop them for spilling? I make the dough into pinch pots and fill. But the curd just wanted to make a mess in the oven. How can I fix this.

Can you make the curd thicker? They still look good!
 
I was thinking maybe that could be part of it. When I've made it I've not made a big X slash, just a couple of small parallel ones.


You were crying in your whole wheat flour? Can we do something to help?

No, our great teacher Ron, advises that we soak whole wheat and rye before continuing with the process and he is more than often correct, this works well. :) his lemon juice suggestion was bang on to.
 
Bread baked, I cheated as I'm so tired. I put it in my oven on number 1 for 20 minutes then turned it up to gas mark 6.
There's a lovely rise and I'm content.
