Any Home Bakers Here?

I have so many eggs, I've been making quiche a lot. I made a recipe that takes 12 regular eggs but I have used 18 small eggs.

I beat the eggs in a large bowl (I use my Kitchen-aid). I beat them with my whisk attachment. I add around a heaping cup and a little more of Bisquick, 1/4 cup milk, and a around a half cup each of any veggies (example: peppers, onions, spinach, grated carrots, grated potatoes) and meat (usually bacon or sausage), a couple cups of cheese, around a half tsp of salt and half tsp of pepper. I also sometimes add some thyme, oregano, or basil. I mix it all up and pour it into a greased 9x13 baking dish or 10x10 corning-ware dish and bake it at 375ºF for around 40 to 45 minutes.

The ingredients don't have to be exact so that is why I put around "Bon Appétit"...
Thanks for the recipe!

@cmom, or anyone, for that matter... For your quiche recipe, what could I substitute that would be gluten free? My regular GF flour?

I several months away from having excess eggs. (I get the new chicks this coming Saturday, so yeah, quite a while to go.) I'm collecting "mega egg" recipes that I can have on hand to try.

Jared, I love your new kitchen. What direction does your bedroom window face?

I posted a quiche recipe here in 2019 that is in the index.
It is gluten free!

Wow! That’s a lot of chickens, but I bet it’s a lot of fun. I wish people would pay for eggs here. They want backyard eggs for the price of great value eggs at walmart though. Not even close to what it costs.

I sell my large eggs for $3.00 a dozen. extra large for $4.00 a dozen, and jumbo eggs for $5.00 a dozen.

Sometimes I will give a dozen away.

If I have extra eggs that are building up in the refrigerator I'll the lady at The Bread of Life to come get eggs.

I can usually give them five (5) to ten (10) dozen at a time. They boil and peel them put them in a baggie with some salt packets. That gives the homeless something to eat later that day.

That’s so cool. Here we can’t give our eggs to food pantries and such, which is ridiculous. If I have them building up I usually end up freezing them for winter use.
