Any Home Bakers Here?

The recipe I found from KAF used an overnight sponge. The next morning you mix the rest of the ingredients and add baking soda and salt at the end.

My guess is that there was not enough acid to make the baking soda work. Another problem is waiting too long between adding the baking soda and cooking the pancakes. Once the reaction stops, the pancakes will not rise anymore.

If the starter is not producing enough acid, you can add some white vinegar or lemon juice to the batter.

Finally, if the recipe has buttermilk in it, make sure it is fresh. buttermilk also has acid in it and will make the pancakes rise. Plain milk is not a sub and needs a table spoon per cup to react with the baking soda.
I'm wondering if things went wrong because I had to make my own buttermilk with milk and vinegar. I actually put a liiiittle too much vinegar into the milk, and my starter smelled very acidic.

The balance is critical!

I make yogurt that I use instead of buttermilk and it is so good in baking!
 
The sourdough pancake recipe I use doesn’t have milk.

Sourdough pancakes
2 cups sourdough starter

2 eggs

2 Tbs sugar

1 tsp salt

1 1/2 tsp baking soda

1Tbs water

Beat eggs

In separate bowl, mix together the sugar salt water and baking soda. Combine with the eggs.

Add sourdough.

Beat with a wooden spoon, do not over beat.
 
2 layers. It was supposed to be 2, 8inch but I used 9 inches on accident. 😐 they look great though. I am going to make the buttercream soon. My cakes are stickyish on the top, what can I do?

I'm not sure but maybe try leaving it out uncovered for a while will help? Putting it in the fridge might be too humid.
