Any Home Bakers Here?

Got 2 questions for you all.

1st, What is the best flour to use in sourdough starter? I use bread flour.

2nd, The sourdough bread I made did not taste sour. I think it’s the flour I am using, but I am not sure. Can someone help me troubleshoot?

Here’s what I did. I fed my starter first, and followed a recipe @ronott1 gave me for sourdough bread. I combined all ingredients (which included yeast,) and followed the recipe exactly. The bread rose BIG time, and when it was done, no sour taste.

Any idea what went wrong? I still got plenty of starter, so I can try again as soon as I build it up.

The bread made with overnight starters will be more sour.

For extra sour bread, pick up some sour salt from the canning section of the store. Start using 1\2tsp and add up to 3\4tsp depending on taste

Well, there’s my problem! I didn’t do an overnight starter! I only did two hours!

Thanks for the help, I will try an overnight recipe.

The rise times will be slower for recipes that do not have commercial yeast in them.

Sourdough baking is so fun!

I use rye flour, it gives it a rise and flavor like no other :)
