Any Home Bakers Here?

I take the starter out of the fridge in the early afternoon and stir in 1\4 cups of flour. I usually start the bread at about 7pm or so. The starter foams and becomes sour that way.
So you add only flour? That’s the timing of the pre bake feed I’ve been doing but it never smelled or tasted sour. I mean the bread is delicious but not actually sour. Also I was adding equal measures of flour and water and am now doing equal weight. The starter is much thicker.

The starter is usually a bit wet out of the fridge. I put just flour into the jar and let it warm up. It is summer here so the kitchen is about 80F. In the winter I put the jar of starter into the proofing box at 85. It sits for about 5 hours and gets bubbly and sour.

It is summer here too but my kitchen is probably around 60 degrees! Maybe that’s why my starter soured on the counter and didn’t mold! :gig

With the whole house fan I was able to get the kitchen down to 68F this morning!

Try adding more starter to the recipe--75G instead of 50 to see how that goes in the cold.

Family visiting...just took 3 loaves Seeded Sourdough Multigrain Bread out of oven. They look as usual. The humidity is not as high. They
will be here for the day tomorrow. Looking forward to their visit. Aria
