@ronott1 can you help me out with something? I seem to have a problem with my sourdough starter.

I TRIED to make sourdough bread twice, overnight recipe. Recipe is here:

The two times I made it this week, the bread does not rise overnight, and it does not rise that much in the oven. Also, the sour taste and smell is not there.

I traced it to the starter, because I have been following the directions and the weights on the recipe exactly. The starter is bubbly when I feed it, but it’s liquidy, even though I’ve been feeding it equal measures of flour and water. I thought I should say that.

Any idea what went wrong?

Use 100 grams of starter and 1 cup of 85F water. After the bulk rise, Kneed in some flour, likely about a quarter cup to make a smooth dough.

Adding the extra starter will make the bread more sour. Sourdough does not like water that is too hot. Adding the flour after the bulk rise will help the yeast in the sourdough to be more active.
 
@jnicholes When you feed the starter and it gets bubbly, does it have that tangy smell?

If you think it is getting too thin, add less water or more flour when you feed it.

I never had a real strong sourdough flavor to my starters, and that is how my DH likes his bread so I never tried to make it more sour. Once in a while, I would use skim milk instead of water to feed my starter - that seemed to keep the slightly tangy taste present.

I hope @ronott1 will have better advice for you.

I like the nice nutty flavor of home made sourdough bread too!

Those that want to make the bread more sour, can add sour salt(ascorbic acid) I have seen it in the canning section of the store. 1\2 teaspoon to a teaspoon will do it.

Nope, no tangy smell. I don’t know what’s going on. No rise, no tangy smell, no sour taste, I don’t know. Did the yeast in it die perhaps?

replenish the starter and add a tablespoon of applecider vinegar-- organic with the mother if possible
