Any Home Bakers Here?

I have some GF sourdough starter on order. Not from the place Ron mentioned; it's still sold out. It's from Cultures for Health. I'm excited for it to get here.

Now I need to learn about making sourdough bread, huh? Though it'll take a bit to get it going.

So I'm going to go through some of the recipes in the Index.

I do not have a Dutch oven or a bread dome. Should I get one of these before I try baking sourdough? If not, what kind of loaf pan would I use?

I am here to learn, ye masters of the sourdough!

Cultures for health is a good place to buy from!

You can use a stone and place a pan of water under the stone on the bottom shelf-- put the pan in after the stone is hot and the bread is ready. Put the pan in-- a cookie sheet with sides will work-- and pour in a couple of cups of water. The water will make steam in the oven.
 
If you want to make a round "artisan" bread like Champlain, I think the dutch oven is useful to keep its shape. Before I had that the entire thing came out pretty flat. The King Arthur Basic Sourdough goes in a regular loaf pan.
Yes! champlain bread is not a good one to bake without support.
