Any Home Bakers Here?

Looks like everyone is trying to get a good head start on Thanksgiving dinner.

What's on the docket today
I'm making the first of two loaves of GF bread to use for stuffing. Got a late start, or I'd get both done today. Tomorrow is when I kick it into gear, so that Thursday, I don't go too crazy.

My goal for this year is to make my first ever Lemon Meringue Pie that does NOT turn into soup! I think my mistake all these years is not putting the meringue onto hot filling, ie, the lemon curd has cooled too much. We'll see if I'm right... :fl

I have never gotten complaints about the taste (or the fact that it's soup), but for my own pride, I'd like to make one that stays together.

If I'm missing any other critical steps, please, please! any one chime in. I've use my MIL's recipe, one that she used for years, and hers always worked. And mine didn't.
 
Anything I can cook tomorrow for Thanksgiving is getting done tomorrow. I need to make another loaf of GF bread for stuffing, and I'll cook the cranberry. (And try not to eat it all; DH doesn't like it.)

I'd have so much room in the fridge if there weren't a turkey taking up nearly a whole shelf...!

I’m making my cranberry sauce tomorrow as well! I have to go pick satsumas from my tree for it, though.
