I think I have shared a pic of my cheesecake here a few months ago. That thing looked horrible. I've improved since then. Here is one I made for my sister's friends today and they loved it -

I would love to make cheesecake. I'd even love to make imperfect cheesecake, and practice until it was perfect. My waistline, hipline, thighline, blood sugar, cholesterol, and other metrics would never forgive me. So I haven't made cheesecake.

On page 84, I posted a recipe for Mini-Cheesecakes. They are a good cheesecake, they bake in a muffin tin with cupcake liners, and they freeze very well so you can limit your cheesecake intake to a cupcake size portion whenever you want to splurge. I used to keep a supply of them in my freezer for unexpected guests.

The recipe calls for a Nilla Wafer cookie for the crust, but I have made a 1/2 batch of graham cracker crust and spooned that into the bottom of the liners for the crust and it works very well. Although Nilla Wafers are way easier than graham cracker crust, lol.

I guess I am an enabaler...
